Saturday Snacks: Crunchy Granola

I looooooove granola.  Who doesn’t? It’s an easy grab and go snack, it makes a great addition to yogurt, and my kiddo loves to snack on it too. Especially when he is in the stroller and I’m trying to get an extra long walk in. He gets bored with my singing and speeches on the native trees in the area. And if you’re a breastfeeding momma, it has oatmeal! I always found oatmeal was like a magic-milk-maker. And apparently other mommas do too.

I like this recipe because you can easily swap out ingredients to make it suit your tastes or dietary needs, or even just what you have in your pantry at the time! Just follow the same proportions and swap out ingredients that have the same consistency- like swapping almonds for pepitas, or canola oil for olive oil. You can also add some seasonings if you'd like- I like to add cinnamon and even tumeric to mine. I added tumeric to just about everything though- it has great health benefits.

Here is one of my favorite concoctions:

3 cups Rolled Oats

2 cups almonds
¼ cup flax seeds
¼ cup canola oil
½ cup of honey
2 teaspoons vanilla extract
½ teaspoon salt
1 ½ cups raisins

Mix everything except dried fruit together and bake at 250 degrees F for about 2 hours, stirring every 20 minutes. Once out of the oven, mix in dried fruit. Let it cool and seal it up in an airtight container. Enjoy!
